Cucumbers

The cucumber is a mild-tasting member of the squash family, consisting of over 90% water. Though it is often referred to as a vegetable, the cucumber is technically a fruit! That's because it has an enclosed seed and develops from a flower. (Read more on Wikipedia.)

Even though cucumbers are mostly water, they do contain many of the essential nutrients our bodies need to maintain good health. These nutrients include vitamin A, vitamin C, vitamin K, folate, potassium, and manganese. Cucumbers are also extremely low in calories (providing only 8 in a 1/2 cup serving), making them an excellent choice for a healthy, refreshing snack. (See more nutrition facts on Self.com.)

Make sure cucumbers are thoroughly dry before you store them: excess water on the surface encourages spoiling. Once they're dry, wrap them in a clean dish towel or paper towel and store in a plastic bag in the refrigerator.
