  • 2 cups of Iggy's Whole Wheat Pan De Mie bread (cut in one inch squares)
  • 1 cucumber, seeded, peeled, and diced
  • 1 tomato, diced
  • ½ green pepper, diced
  • ½ onion, finely chopped
For Vinaigrette, combine:
  • 1/3 cup olive oil ( I use Zoe Extra Virgin Olive Oil)
  • 2 tbsp Apple Cider Vinegar (from Dwight Miller & Son Orchards), or add quantity to taste
  • 2 cloves garlic, finely minced
  • Salt & pepper to taste


1. Heat 1-3 tbsp of olive oil in skillet (low-med heat). Add in 2 cups of bread and season bread with a bit of salt. Cook in skillet, stirring frequently for approximately 10 minutes until the bread browns.

2. In a bowl, combine the diced cucumber, diced tomato, green pepper, and onion.

3. To make vinaigrette, combine olive oil, apple cider vinegar (or to taste), garlic, and salt & pepper to taste.

4. Add bread to veggies & pour vinaigrette over top -Toss together & serve immediately or let sit for ½ hour before serving. Enjoy!!
