Mandarin Crunch Bowl with Spicy Orange Peanut Sauce

Ingredients

For the Spicy Orange Peanut Sauce
    • 1 orange zested
    • 1 lime juiced
    • 1/2 cup creamy peanut butter (or almond butter)
    • 1/4 cup coconut cream
    • 2 tsp soy sauce
    • 2 Tbsp water
    • 2 1/2 tsp Sriracha
For the Crunch Bowl
    • 4 mandarins
    • 3 cup slivered romaine lettuce or other tender leafy green
    • 1/2 cup shredded red cabbage
    • 1/2 cup shredded carrots
    • 1/2 cup diced cucumber
    • 1/4 cup torn mint leaves
    • 1 green  onion, thinly sliced
    • 2 1/2 Tbsp coarse chopped, roasted peanuts (or almonds)
    • 1 lime, cut in  half

SPICY ORANGE PEANUT SAUCE

1. Mix together all ingredients until smooth. (Sauce can be stored refrigerated for up to 7 days.)

CRUNCH BOWL

1. For bowls, peel and segment oranges and set aside.

2. Place lettuce in bowls and arrange cabbage, carrots, cucumber and oranges on top.

3. Scatter with mint, green onions, and peanuts.

4. Serve with Spicy Orange Peanut Sauce for drizzling and lime for squeezing.
