Apricots

While the exact origins of the apricot are unknown, many believe the fruit to be native to China. The fruit resembles a small peach, with a surface that can be either smooth or fuzzy. Compared to a peach tree, the apricot tree can tolerate colder temperatures and therefore grows well in continental climates. (Learn more about apricots on Wikipedia.)

Apricots are an excellent source of vitamin A, an essential nutrient for maintaining and improving eyesight. They also contain plenty of vitamin C, fiber, and potassium. (See many more nutrition facts at Self.com.)

Apricots should be stored at room temperature until they are ripe. Once ripened they should be stored in a plastic bag in the refrigerator. They are very perishable!
