Roasted Potatoes with Basil (Microwave)


  • 1 lb. roasting potatoes
  • 1/8 cup olive oil
  • 1/4 cup fresh basil or 1 Tbsp dried



Cut roasting potatoes into bite sized pieces and place in sealable microwave-safe container. Rinse with cold water and drain.

Pour oil over potatoes and sprinkle with basil (or your favorite seasoning). Place the litd on the container and shake to thoroughly coat the potatoes with the oil mixture.

Microwave on high for 5-7 minutes or until fork tender. Be cautious of hot steam when removing lid.
