Garlic Roasted Potatoes


  • 2 lbs small potatoes or larger potatoes cut into cubes
  • Just under 1/4 c olive oil
  • 1 tsp kosher salt
  • 3/4 tsp fresh ground black pepper
  • 4 cloves minced garlic


Preheat oven to 400. Cut potatoes in halves or quarters, leaving skins on. Place them in a bowl with the olive oil, salt, pepper & garlic; toss until potatoes are well-coated. Prepare a larger baking sheet: either spray it with cooking spray, or wipe it down with olive or canola oil. Spread your potatoes out in one layer on the sheet. Roast for at least an hour until brown and crisp, turning them twice during cooking for even browning.
