Garlic Scape Hummus


  • 2 cups cooked or canned chickpeas
  • 12 garlic scapes, chopped, with one reserved for garnishing
  • 3 scallions, chopped
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp freshly ground pepper
  • 1/4 cup sesame seeds
  • 2 tbsp water
  • 2 Tbsp lemon juice water
  • 1/4 cup extra virgin olive oil


1. Place all ingredients except olive oil into a blender or food processor. Blend until smooth. Slowly add olive oil until desired consistency is reached.  You may need more water, depending.

2. Transfer to a serving bowl. Garnish with one chopped scape, paprika and some sesame seeds and drizzle with olive oil.
