Blueberry Pear Oatmeal Muffins

  • 1 1/2 cups all purpose flour
  • 1 1/4 cups old-fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 3/4 cup milkĀ 
  • 3/4 cup light brown sugar
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 pear, peeled, cored and finely chopped
  • 1 1/4 cups blueberries
  • Topping
  • 2 Tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 cup sliced almonds


Preheat oven to 375. Grease and flour a 12 cup muffin tin, or use paper liners.

Combine flour, oats, baking powder, baking soda, cinnamon, ginger and salt in large bowl.

Whisk milk, sugar, eggs and oil in medium bowl until smooth.

Stir milk mixture into flour mixtures until combined then fold in pears and blueberries.

Combine topping ingredients in small bowl. Spoon batter evenly into muffin tin and sprinkle with topping. Place in oven and bake for 20-25 minutes. Cool in tin for 5 minutes and then remove muffins to cooling rack.
