Apple Honey Whiskey Muffins

  • 2 cup all-purpose flour
  • 1 cup sugar
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp kosher salt
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • a pinch of cardamom
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 2 Tbsp whiskey (optional, can add 1 tsp vanilla instead)
  • 1/4 cup hot coffee
  • 1 large apple, chopped


1. Preheat oven to 350°F. Line and grease muffin tin. In medium bowl, combine all dry ingredients (flour, sugar, baking soda, baking powder, salt, cinnamon, cloves, cardamom)

2. In  large bowl, combine eggs, oil, honey, and whiskey. Whisk in dry ingredients and then whiskey and coffee coffee. Fold in the chopped apple and scoop into muffin tin.

3. Bake until golden brown and a toothpick stuck into the center comes out clean. Begin checking for doneness at about 20 minutes. Let cool and enjoy! (Try sprinkling them with powdered sugar or plopping a nice blob of yogurt on top.)
