Plum Clafoutis

  • 1/4 cup unsalted butter
  • 6 medium plums (or other fruit, see below), pitted and cut into eighths (4-5 cups fruit)
  • 1/2 cup granulated sugar, divided
  • 4 eggs
  • 1/2 cup all purpose flour
  • 1/2 tsp salt
  • 1 cup milk
  • 1 Tbsp vanilla extract
  • 1/2 tsp almond extract or other flavoring of your choice like cinnamon or grated lemon zest or ginger or small amount of cardamon or nutmegĀ 
  • Confectioners' sugar for dusting


Heat oven to 400. Place butter in 9x13 baking dish and place in oven to melt. Coat bottom and sides of baking dish with butter. Remove from oven.

Toss plums/other fruit with 1/4 cup sugar and place in baking dish.

Whisk dry ingredients together in small bowl. Whisk eggs in medium bowl. Whisk dry ingredients into eggs. Whisk milk and extracts into egg mixture. Pour over plums.

Place in oven and bake for 40-45 minutes or until golden brown and puffy. Cool 30 minutes. Dust with confectioners' sugar and serve warm.

Equally good with cherries, blueberries, pears, peaches, apricots, strawberries....
