Southern-style Turnip Greens

  • Turnip greens
  • Bacon drippings, or olive oil
  • Salt and pepper

Wash your turnip greens and remove center tough stems. Roll the leaves, and slice them into 1 inch wide strips. Put them in a large pot, and cover with water. Boil for two or three minutes. Pour off the water, and just cover with fresh water. Bring to a boil again, adding more water as needed to keep the greens from burning. Cook until tender.

Next, put some bacon drippings or the fat of your choice (olive oil is fine) in a skillet or frying pan over high heat. Add the drained greens and salt and pepper to taste. Cook, stirring, until very tender. Enjoy!
