Zucchini and Tomato Stew


  • 3 medium tomatoes (diced)
  • 1 lb zucchini (chopped into small pieces)
  • 1 medium sized onion (chopped)
  • 1-2 cloves of garlic
  • 1 Tbsp lemon juice
  • 1 tsp crushed mint
  • 1 Tbsp oil
  • salt and pepper to taste


Sautee the onion in oil for 3-4 minutes on medium heat until lightly translucent. Add zucchini and stir for 2-3 minutes. Add garlic, tomatoes, salt, mint, and lemon juice. Stir until mixture comes to a slight boil. Then reduce heat and let simmer for 15 minutes. Serve over rice or grain of choice. Enjoy!
