Cantaloupe Pico De Gallo


  • 1 cup cantaloupe, finely diced
  • 3/4 cup cucumber, finely diced
  • 3/4 cup tomato, finely diced
  • 1/2 cup red onion, finely minced
  • 1/2 cup cilantro, roughly chopped
  • 2 Tbsp fresh lime juice
  • 1 Tbsp jalapeno, finely grated
  • Salt and pepper, to taste


Combine all ingredients in a large bowl. Mix well. Season with salt and pepper to taste. 

Refrigerate for 15 minutes before serving with fish, chicken or chips.
