Green Pepper and Tomato Salad


  • 2 green bell peppers, seeded and cut into thin strips
  • 3 vine-ripe tomatoes, seeded and diced
  • 1 small onion, chopped
  • 1 large clove garlic, finely chopped
  • 1/2 cup flat-leaf parsley leaves, coarsely chopped
  • 1/2 lemon, juiced (1 tablespoon)
  • 1 Tbsp red wine vinegar
  • 3 Tbsp extra-virgin olive oil
  • coarse salt and black pepper
  • 1 tsp ground cumin


1. Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your bare hands.

2. Squeeze lemon juice evenly over the salad. Sprinkle a tablespoon of vinegar over the salad. Drizzle extra-virgin olive oil over salad, add salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.
