Tomato, Watermelon and Basil Skewers

Tomato, Watermelon and Basil Skewers


  • 1/4 cup balsamic vinegar
  • 1/4 cup sugar
  • 1 (4 to 5 lb) watermelon cut into 1 1/2-inch cubes
  • 32 basil leaves, torn to approx. same size
  • 16 cherry tomatoes, halved (or chopped tomato)
  • 2 Tbsp extra virgin olive oil
  • kosher salt, to taste
  • Skewers


Combine balsamic vinegar and sugar in saucepan over medium heat.  Bring to simmer, stirrring occasionally until sugar is dissolved.  Remove from heat and set aside to cool. Arrange skewers starting with the watermelon squares, then  basil leaf and finally tomato half.  Repeat. Arrange skewers on plate and drizzle with the reserved balsamic syrup and olive oil.  Sprinkle with salt. Serve.
