Healthy Grain Bowl with Lemon Ginger Dressing

Ingredients

Bowl:
  • 1/2 cup cooked, cooled whole grain (brown rice, quinoa, millet, etc.)
  • 1/2 cup leafy greens, blanched and cooled or raw (collards, chard, kale, etc.)
  • 1/2 cup broccoli florets, blanched and cooled
  • 1/2 avocado, sliced
  • 1 medium carrot, julienned
  • 1 small beet, cooked, cooled and julienned
  • 1/8 cup sprouts (like Jonathan's Munchin Mix) 
Dressing:
  • 2 garlic cloves, finely minced
  • 2 inches of fresh peeled ginger, finely minced
  • 1 Tbsp Tamari Sauce or Soy Sauce
  • 2 Tbsp lemon juice (about 1/2 of a lemon)
  • 2 Tbsp Tahini (sesame seed butter)
  • 1 Tbsp olive oil or flax oil
  • 2 Tbsp water

Recipe

You can use any whole grains, organic veggies, sprouts, nuts and seeds to create the base for your grain bowl. We suggest starting with a mix like this one and then get creative and incorporate your favorite seasonal vegetables, whole grains, nuts and seeds!

1. For dressing, combine all dressing ingredients in your blender or food processor. Blend until smooth and creamy. 

2. Build your bowl beginning with the grains and layering on the other ingredients as desired. Top with dressing and serve.
