Fig, Walnut and Spinach Salad


  • 1/2 medium onion, sliced thinly
  • 5 oz fresh spinach
  • 8 dried figs, sliced
  • 2 tbsp chopped walnuts
  • 1/2 tsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp white wine or apple cider vinegar
  • 1 cup hot water
  • 2 tbsp olive oil
  • salt and pepper


Marinate your sliced onion in white wine/apple cider vinegar and hot water for 10 minutes. Rinse and dry your spinach. Whisk together balsamic, honey, and salt and pepper, add the olive oil slowly. Take your onions out of the marinade and toss all ingredients together. Enjoy!
