Garlic Scape Hummus

Ingredients

  • 2 cups cooked or canned chickpeas
  • 12 garlic scapes, chopped, with one reserved for garnishing
  • 3 scallions, chopped
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp freshly ground pepper
  • 1/4 cup sesame seeds
  • 2 Tbsp water
  • 2 Tbsp lemon juice water
  • 1/4 cup extra virgin olive oil

Recipe

1. Place all ingredients except olive oil into a blender or food processor. Blend until smooth. Slowly add olive oil until desired consistency is reached.  You may need more water, depending on desired consistency.

2. Transfer to serving bowl. Garnish with one chopped scape, paprika and some sesame seeds and drizzle with olive oil.
