Summer Vegetable Chopped Salad


  • 3 scallions, sliced thinly on the bias
  • 1 clove garlic, mashed with 1/4 tsp salt
  • 1 Tbsp red wine vinegar
  • 3 Tbsp extra virgin olive oil
  • 1 pint grap tomatoes, quartered
  • 1 cucumber, peeled, seeded and chopped into chunks
  • 1 celery heart and leaves, thinly sliced
  • 1 sweet pepper, roasted, skinned and chopped
  • 1/4 cup parsley leaves, chopped (or basil or cilantro)
  • 1/2 cup feta cheese
  • S&P to taste


Mix sliced scallions, garlic pastes, vinegar, olive oil in medium sized bowl and allow to macerate for 10 minutes.

Add remaining ingredients through parsley leaves and toss gently. Add feta, taste for seasoning and add S&P as needed.

Serve as a summery side to grilled beef, chicken or fish with bread on the side.
