  • 2 large green peppers
  • 4-5 cloves of garlic
  • 1 large onion, or 3 small ones
  • 1 bunch of cilantro
  • 1/2 cup vegetable oil
  • 2 Tbsp tomato paste
  • spices, try oregano or chiles for a spicier sauce


Sofrito is a basic blend of peppers, onions, garlic, and cilantro blended together to create a puree. Try it in rice and beans, soups and stews.

1. Finely dice all vegetables and saute in the oil on low heat, for 15-30 minutes, stirring occasionally. Season to taste and use immediately, or freeze in ice cube trays for longer storage.
