Onion Jam


  • 2 or 3 small onions
  • 1 1/2 cup of castor sugar
  • 1/4 cup of brown sugar
  • a sprinkling of cinnamon
  • a pinch of paprika or chilli powder


1. Slice the onions very thinly and place in saucepan with the castor sugar and brown sugar. Cook on low heat until sugar starts to breakdown.

2. Add the cinnamon and chilli and cook on a very low heat for about 40 minutes.  Keep an eye on it and stir often until it thickens to the right consistency.
