Mandarin Orange Vinaigrette


  • 2 mandarin oranges, juiced (about 3/4 cup)
  • 2 Tbsp balsamic vinegar
  • 1 small shallot, finely chopped or thinly sliced chives, approx 2 Tbsp
  • 1/2 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper


Combine all ingredients in a small bowl or jar, mix or shake to combine. Serve atop your favorite salad. Would also be a delicious marinade for chicken, fish, pork or tofu.
