Red-Leaf Lettuce with Shallot Vinaigrette


  • 1 large shallot, minced
  • 2 tsp white-wine vinegar
  • 2 tsp Dijon mustard
  • 3 1/2 tbl olive oil
  • Coarse salt to taste
  • 1 large head red-leaf lettuce


1. Stir together shallot and vinegar and let stand 10 minutes.

2. Whisk in mustard, oil, kosher salt, and pepper to taste until blended.

3. Tear lettuce into bite-size pieces and toss with shallot vinaigrette.
