Purple Slaw with Cabbage and Kohlrabi


  • 3 medium kohlrabi, peeled, stems trimmed, grated
  • 1/3 head purple cabbage, shredded
  • 2 carrots, grated
  • 1/2 red onion, grated
  • 1/4 cup golden raisins
  • 1 Tbsp sugar
  • 1 Tsp salt
  • 1 Tbsp apple cider vinegar
  • 4 Tbsp cilantro, chopped
  • 1/4 cup mayonnaise (or hummus!)


This recipe is extremely easy to make with a food processor or a mandoline, but you can also shred the vegetables by hand.

Combine all the ingredients in a bowl and mix well, preferably with your hands. Chill for several hours before serving.
