Kohlrabi and Apple Slaw


  • 1 pound kohlrabi
  • 2 apples, sweet variety
For the dressing:
  • 1/4 cup cream
  • 1 tablespoon fresh lemon juice
  • 1/2 tablespoon Maison Orphee Organic Dijon Mustard
  • 1/2 teaspoon sugar
  • Salt & pepper, to taste
  • Fresh mint, chopped


Trim, peel and grate the kohlrabi. Alternatively, use a Benriner to evenly cut batons. Peel and grate the apples, trying to keep equivalent volumes of kohlrabi and apple.

Whisk cream into light pillows - this takes a minute or so by hand, and does not require an electric mixer. Stir in the lemon juice, seasonings and herbs.  Fold in the grated kohlrabi and apple. Serve immediately.
