1. Toss all ingredients for Watermelon Radish Salad together and let sit overnight in the fridge.
2. Lightly warm tortilla and spread with hummus. Place watermelon radish salad on hummus and top with sprouts and kale (if preferred, you can lightly saute the kale first).
3. Roll tightly and serve with remaining salad and kale. Make sure to use the remaining liquid as a dressing. Enjoy!
