Baked Carnival Squash With Smoked Bacon and Rosemary


  • 1 carnival or acorn squash
  • salt and black pepper to taste
  • 1/4 lb smoked bacon, diced
  • 3 1/2 Tbsp olive oil
  • 1/2 tsp dried or fresh rosemary
  • 2 garlic cloves, minced
  • 1/4 tsp nutmeg
  • 1 tsp sugar


1. Preheat oven to 375°F. Halve squash, scoop out seeds and fibers, cut each half into two chunks. Place skin-down on shallow baking tray. Sprinkle salt and black pepper on flesh.

2. Dice bacon and combine with olive oil, rosemary, garlic, nutmeg and sugar in a bowl. Spoon mixture over the squash chunks. Bake on a middle rack for 25-30 minutes. Serve hot.
