Sanda's Kale Soup


  • 2 Tbsp. olive oil
  • 5 or 6 garlic cloves, sliced
  • 3 plus cups water or vegetable broth
  • 1 bunch kale, chopped into bite-size pieces
  • 1 cup cooked brown rice
  • 5 red potatoes, diced and cooked
  • 1 or 2 Tbs. soy sauce


1. In a heavy bottom stock pot, saute sliced garlic in olive oil until just starting to brown.  Add water or stock and increase the heat.

2.  Slowly add the kale, cover and simmer about 10 minutes until tender.  Add the rice, potatoes and soy sauce and simmer 5 more minutes.
