Quick Pickled Watermelon Radishes


  • 3 medium-size watermelon radish
  • 1.5 cup white vinegar
  • 1/4 cup sugar (or equivalent of stevia)
  • 1 tsp salt
  • 1 tbl chopped dill
  • 1 garlic clove, peeled and roughly sliced


1. Peel and trim the ends off the radishes. Slice thinly and pack a clean quart jar with radish slices.

2. In a small saucepan, heat the vinegar, sugar and salt until dissolved.

3. Allow vinegar concoction to cool slightly, then pour over radishes.  Add in garlic, dill, and enough water to cover the radishes. Stir the jar.  Chill and serve within a few hours!
