Vietnamese Lettuce Wraps

  • Lettuce Wraps:
  • 4 leaves lettuce
  • 1/2 avocado, sliced (optional)
  • 1 cup baked or smoked tofu or seitan, shredded or cut into bite size pieces or leftover chicken or fish or shrimp
  • 2 radishes sliced
  • 1 cup matchstick carrots or shredded cabbage
  • 1 small cucumber
  • 1-2 scallions sliced
  • 6-8 fresh mint leaves
  • 2 Tbsp roasted crushed peanuts (optional)
  • Nuoc Cham (or if you want, make VEGAN NUOC CHAM):
    1/4 cup lime juice
  • 2 tsp sugar
  • 2 tsp fish sauce
  • 2 tbl water
  • 1 tsp sriracha


1. Make Nuoc Cham. Stir all ingredients together in a small bowl. 

2. Assemble Wraps. Arrange lettuce leaves on a plate. Divide veggies among them and fill with protein (tofu, or tempeh!). Add a slice of avocado, scallions, torn mint leaves, and peanuts. Serve immediately with Nuoc Cham.
