Stir-Fried Broccoli & Carrots With Peanuts


  • Olive oil (or any cooking oil)
  • 1 clove garlic, chopped finely
  • 1 pound broccoli, chopped to small florets
  • 2 medium carrots, sliced to round pieces
  • 3 Tbsp soy sauce
  • 1 Tbsp honey
  • 2 Tbsp water
  • 3 tablespoons peanuts, chopped finely
  • Pepper
  • Sriracha, optional


    Over medium heat, saute garlic in a wok or large skillet with olive oil. Add broccoli and carrots. Toss for 5 minutes. In small bowl, mix soy sauce, honey and water. Pour over vegetables and toss for another 5 minutes. Season with pepper and sprinkle with the peanuts. Drizzle with sriracha as desired. Serve over rice.
