Stephanie's Carrot-Radish Slaw


  • 2 carrots, shredded
  • 2 watermelon radishes, shredded (you can also substitute a beet)
  • 2 Tbsp fresh parsley, finely chopped (optional)
  • 1 scallion, finely sliced
  • 1/2 tsp sugar
  • 2-3 Tbsp apple cider vinegar


Shred the carrots and radishes with a cheese grater and toss with the sugar let sit as you prepare the parsley and scallions. Gently stir in the parsley and scallions and vinegar. Serves 2-4.
