Preheat oven to 425.
Thinly slice cabbage (a mandolin works well here) and toss with 1-2 Tbsp olive, a few generous pinches of salt and 1-2 Tbsp seasoning of your choice.
Spread thinly on a baking sheet and roast for 10-20 minutes, depending on how thinly sliced your cabbage is. Toss halfway through to encourage even browning. Taste and adjust seasonings.
Garnish as desired and serve! A delicious accompaniment to meat, chicken or eggs.
