Mango Coleslaw

Ingredients

  • 3 cups shredded cabbage
  • 1 large carrot peeled and shredded
  • 1 red bell pepper, very thinly sliced
  • 1 mango peeled and cut into thin strips
  • 1 jalapeno, finely diced, seeds used as desired for heat
  • 3-4 scallions, thinly sliced on the bias
  • 1/2 cup cilantro
  • 2-3 Tbsp freshly squeezed lime juice plus 1/2 tsp zest
  • 1-2 Tbsp neutral oil
  • Honey, to taste
  • Salt & pepper to taste

Recipe

Toss vegetables together gently in large bowl.

In small bowl mix together lime juice, lime zest, oil, honey if using, salt & pepper. Pour dressing over vegetables, toss gently, taste and adjust for seasoning, add cilntro and toss again.

Delicious with grilled fish, chicken, shrimp or tofu. Serve in tacos, wraps and sandwiches.
