Simple Fresh Corn Salad


  • 5 ears of corn, shucked
  • 2 scallions, whites and greens thinly sliced
  • 2 Tbsp olive oil
  • 2 Tbsp cider vinegar
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup thinly sliced fresh basil


Bring large pot of water to boil. Add corn and allow to boil 3-4 minues. Drain corn and immerse in cold water. Using sharp knife cut corn kernels from cob into large bowl.

Add scallions, oil, vinegar, salt and pepper. Refrigerate until ready to serve. Taste and adjust for salt, papper and vinegar. Add fresh basil and serve.
