Mix together in a medium bowl the egg, flour, baking powder, buttermilk, brown sugar, salt and bananas.
Allow batter to sit for 15-30 minutes. This makes the batter nice and fluffy.
While the batter is resting, preheat your griddle or pan to medium heat.
Pour scoops of the batter onto the hot griddle. Cook for a couple minutes, until the edges look light brown and there are bubbles in the middle. Then flip over and cook the other side until done. Should be firm to touch.
Repeat with remaining batter until the batter has been used up.
Serve warm, topped with yogurt, honey and blueberry granola.
