Mix together in medium bowl: egg, flour, baking powder, buttermilk, brown sugar, salt and bananas.
Allow batter to rest 15-30 minutes. This makes the batter nice and fluffy.
While batter is resting, preheat griddle or pan to medium heat.
Pour scoops of batter onto hot griddle. Cook 2-3 minutes, until edges look light brown and bubbles appear on surface. Flip over and cook other side until done. Should be firm to touch.
Repeat with remaining batter until all batter has been used up.
Serve warm, topped with yogurt, honey and blueberry granola.
