Beer Battered Apple Fritters

Ingredients

  • 1 lb. apples, peeled, cored and cut into ½ inch thick rings
  • 1 cup all-purpose flour
  • pinch of salt
  • ½ cup beer (more if needed)
  • 1 egg plus 2 egg whites
  • 2 Tbsp. sugar
  • 1 Tbsp. canola oil
  • Confectioners’ Sugar
  • Honey
  • Canola oil for frying

Recipe

1. Sift the flour and salt together in a mixing bowl. Make a well in the center.
Combine the whole egg and one half of the beer and add to the dry ingredients,
stirring slowly to make a smooth paste (if too much beer is added too quickly,
the batter will be lumpy). Add the rest of the beer, cover, and let sit for 30 to 60
minutes.
2. Heat the oil to 375 degrees.
3. Whip the egg whites to a point just beyond soft peaks, add the sugar and whip
until glossy. Thin the batter with a little more beer if needed. Gently fold the whites
into the batter.
4. Dip the apple rings into the batter to oat them and then fry in the oil until light
brown on both sides, about 2 minutes per side. (Be sure to cook through the center,
keeping in mind that the temperature of the oil will change as the fritters are added
to it.) Sprinkle fritters with confectioners’ sugar and drizzle with honey while still
hot.
