Easy Raw Corn Salad with Tomatoes, Cilantro and Cheese

Ingredients

  • 1 1/2 lbs organic heirloom tomatoes, roughly chopped or 2 pints grape tomatoes, cut in half
  • 1 ear corn, kernels shaved from cob
  • 1 small shallot, finely diced
  • 1 jalapeno, seeded, stemmed and minced
  • Juice from half a lime
  • 2-4 Tbsp olive oil
  • 2-4 ounces feta cheese or cotija or queso fresco, crumbled
  • 1/2 cup cilantro leaves, roughly chopped
  • Salt and pepper, to taste

Recipe

In large bowl mix all ingredients except cilantro and toss gently. Taste and adjust for salt and pepper. Add half of cilantro and toss gently. Sprinkle with remaining cilantro and serve.
