Tomato, Watermelon and Basil Skewers

Tomato, Watermelon and Basil Skewers


  • 1/4 cup balsamic vinegar
  • 1/4 cup sugar
  • 1 (4 to 5 lb.) watermelon cut into 1 1/2-inch cubes
  • 32 basil leaves, torn to approx. same size
  • 16 cherry tomatoes, halved (or chopped tomato)
  • 2 Tbsp extra virgin olive oil
  • kosher salt, to taste
  • Skewers


Combine the balsamic vinegar and sugar in a saucepan over medium heat.  Bring to a simmer, stirrring occasionally until the sugar is dissolved.  Remove from heat and set aside to cool. Arrange the skewers starting with the watermelon squares, then a basil leaf and finally a tomato half.  Repeat. Arrange skewers on a plate and drizzle with the reserved balsamic syrup and olive oil.  Sprinkle with salt. Serve.
