BLT Avocado Pasta Salad


  • 8 oz pasta
  • ¼ cup light mayonnaise
  • ¼ cup milk or yogurt
  • 1½ tsp Dijon mustard
  • 2 cloves garlic, minced
  • ¾ tsp salt
  • 4 lightly packed cups sliced romaine
  • ½ lb sliced bacon/bacon substitute, cooked until crisp and chopped
  • 2 large tomatoes, sliced or pint grape tomatoes sliced
  • 2 avocados, diced
  • ¼ cup feta cheese, crumbled
  • pepper to taste
  • Basil, parsley, dill or cilantro to garnish


1. Cook pasta according to package directions. Drain and rinse under cold water until cool.

2. In a large bowl whisk light mayonnaise, milk, dijon mustard, garlic and salt.

3. Add the romaine, bacon, tomatoes and avocados. Toss lightly until coated.

4. Sprinkle with feta cheese and pepper, garnish as desired and serve.
