1. Slice potato, boil in salted water until tender; about 8 minutes. Transfer to cold water and remove skins. Mash with fork. Add banana, egg, and apple. Combine thoroughly.
2. Melt coconut oil in a medium-heat pan. Spoon mixture into pan and cook each side until golden; about 4 minutes each side. Serve warm with maple syrup!
