Fig, Walnut and Spinach Salad


  • 1/2 medium onion, sliced thinly, red onion is pretty here, shallot is nice too
  • 5 oz fresh spinach
  • 8 dried figs, sliced or fresh plums or pluots
  • 2 Tbsp chopped walnuts
  • 1/2 tsp honey
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp white wine or apple cider vinegar
  • 1 cup hot water
  • 2 Tbsp olive oil
  • salt and pepper


Marinate sliced onion in white wine/apple cider vinegar and hot water for 10 minutes. Drain.

Meanwhile, rinse and dry spinach.

Whisk together balsamic, honey, and salt and pepper, add olive oil slowly. Toss ingredients together. Enjoy!
