- 2 carrots, shredded
- 2 watermelon radishes, shredded (you can also substitute a beet)
- 2 Tbsp fresh parsley, finely chopped (optional)
- 1 scallion, finely sliced
- 1/2 tsp sugar
- 2-3 Tbsp apple cider vinegar
Shred the carrots and radishes with a cheese grater and toss with the sugar let sit as you prepare the parsley and scallions. Gently stir in the parsley and scallions and vinegar. Serves 2-4.
