Roasted Purple Potatoes with Lemon, Dijon and Thyme Dressing


  • Roasted Potatoes
  • 2 pounds purple potatoes, cut into quarters
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Lemon Dijon Thyme Dressing
  • 1/4 cup olive oil 
  • 1 tbsp dijon mustard
  • 2 tbsp fresh lemon juice
  • 2 tsp chopped fresh thyme
  • 1 tsp minced garlic (more to taste)
  • Salt and pepper, to taste


Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper. 

Place cut potatoes on the pan and toss with olive oil, salt and pepper. Spread out potatoes in an even layer and roast until easily pierced with a fork, about 40 minutes. 

While potatoes are roasting, make the dressing by combining the ingredients in a bowl and whisking until well incorported. 

When potatoes are finished, toss with dressing and enjoy!
