Oyster Mushrooms

The oyster mushroom got its name because of its broad, oyster-shaped cap.  It is a delicacy that is frequently used in Japanese, Korean, and Chinese cuisines.

Oyster mushrooms are a great source of tons of essential nutrients including fiber, niacin, iron, and protein. One large mushroom satsfies about 10% of the recommended daily values for both protein and iron, making it a great addition to vegetarian meals! Oyster mushrooms also contain statins, which research has shown can lower cholesterol. (Read more on Wikipedia and see more nutrition facts on Self.com.)

Prepackaged mushrooms can be stored, unopened, in the refrigerator for about one week. Once opened, mushrooms should be moved to a paper bag and refrigerated.
