Delicata Squash and Apple Saute


  • 2 cups cooked Delicata squash, cooled and diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 1/4 cup celery, diced
  • 1 teaspoon marjoram
  • 1 apple, diced (approximately 1 cup)


1. Cook squash. Cut it in half, scoop out seeds and bake, cut side down, for 35 minutes. Cool. Dice into cubes.

2.  Sauté garlic in olive oil. Add celery, onion and marjoram, stir 1 minute. Add apple, stirring till apple is cooked through. Add cooked squash and heat until hot.

Serves 6.
