Kale Salad


For the Salad:
  • 1 Bunch Kale, stems removed
  • 1 Onion, sliced thin
  • 4 oz. Feta Cheese
For the Dressing:
  • 1 Part Lemon juice
  • 2 Parts Extra Virgin Olive Oil


Slice your onion and rip up your kale into bite sized pieces and crumble the feta into it. Mix your dressing ingredients and shake well, and add them to the salad. Serve immediately. This is a great hearty salad which works equally well in summer as in winter.
