A very easy and very good winter beverage. Start off with these proportions and modify it according to your preference for spiciness. 4 cups of water will make about two mugs of tea. Peel and dice your ginger. Add the ginger and water to a saucepan, and bring to a boil. (Keep an eye on it, it will boil over if you've got the pan covered and it really gets going.) Reduce the heat and simmer for 15-20 minutes. Add honey and your lemon slice, if you'd like, pour it into a cup, and enjoy!
