Pizza with Indian-Spiced Tomatoes, Mustard Greens and Goat Cheese

Ingredients

  • 3 Tbsp. vegetable oil
  • 1 large onion, finely chopped
  • 3 1/2 Tbsp. fresh ginger, minced
  • 2 1/2 tsp. ground coriander
  • 2 1/2 tsp. ground cuim
  • 1/4 tsp. crushed red pepper flakes
  • 2 1/2 cups crushed tomatoes
  • 2 cups mustard greens, chopped
  • 1 pizza crust, homemade or other
  • 8 oz. soft goat cheese, crumbled
  • salt and pepper, to taste

Recipe

1.  Prepare crust as instructed.  Preheat oven to 450 degrees. 

 

2.  Heat oil in a large skillet over medium-high heat.  Add onions and seasoning and saute for about 5 minutes.  Add tomatoes.  Reduce heat and simmer until thickens slightly.  Add the greens, stir until wilted.  Season with salt and pepper. 

 

3.  Assemble pizza on baking sheet and place in over for about 8 minutes.
