  • 2 large green peppers
  • 4-5 cloves of garlic
  • 1 large onion, or 3 small ones
  • 1 bunch of cilantro
  • 1/2 cup vegetable oil
  • 2 tbl tomato paste
  • spices, try oregano or chiles for a spicier sauce


Sofrito is a cooking base used in Caribbean cooking, and it adds flavor to any dish. Try it in rice and beans, soups and stews.

1. Finely dice all vegetables and saute in the oil on low heat, for 15-30 minutes, stirring occasionally. Season to taste and use immediately, or freeze in ice cube trays for longer storage.
